Creation Wines was the only cellar to have been selected to serve their wines at the Chefs Theatre of Cape Town’s Good Food & Wine Show held between 21 and 24 May 2015. This annual event showcases the best of local and international talent in a spectacle that has foodies lining up to sample exquisite wines, craft beer, decadent cakes, sweets and delicious food. One of the biggest attractions each year is the attendance of celebrity chefs, both from South Africa and abroad, who present interactive masterclasses in the Chefs Theatre. Always at the forefront of wine pairing innovation, Creation Wines was proud to partner with the Chefs Theatre to create sublime pairings for the various dishes demonstrated to the audience each day.

Thus the famous chef Peter Goffe-Wood paired his Seared Yellowtail with Fennel, Olives, New Potatoes and Salsa Rossa with the 2015 Creation Sauvignon Blanc – a sensational match!

The “We Build” Initiative

Creation is proud to be associated with ‘We Build’, a community project to construct fire proof dwellings in the notoriously fire prone townships. This admirable project is the brainchild of Anthea van der Pluym who, through suffering severe burns of her own, was moved to embark on a journey towards safer, more secure homes for those who currently reside in informal dwellings.

The pilot house under construction at 34 Kholekala Street in Zwelihle is a critical step towards making the initiative a sustainable, viable option as the results of this first building will determine the feasibility of the project. Additionally it will stimulate interest from the stakeholders and those who stand to benefit from the skills and technology involved in the construction of these eco-homes.

The first day of construction was Saturday 23rd May with the concrete foundation slab laid during the previous week. A festive atmosphere prevailed as various local businesses and individuals contributed food, refreshments and even live music to the team of over 60 volunteers. By the end of day 1 the house was approaching the half-way point, with most of the building work completed on day 2, Sunday 24th May. Wine Word of the Week: Lees

Primary fermentation is the process whereby yeast converts the sugar in grape juice into alcohol and CO2. The deposits of dead or residual yeast cells that remain after this process is complete are known as ‘lees’ and although many wines are removed from this deposit or racked after primary fermentation by moving the wine to another vessel, some wines benefit from maturation on the lees. (‘Sur lie’ is the French term – often indicated on the label.) The residual yeast is known to impart autolytic flavours (flavours associated with yeast) such as brioche or toasty notes as well as a supple, creamy mouthfeel. Wine such as Chardonnay and the wines of Champagne often benefit from extended lees contact.
