Ingredients

  • 3 tbsp olive oil
  • 2 cloves garlic
  • 1 small chilli, finely sliced
  • 2 tbsp tomato puree
  • 1 cup Syrah, Grenache wine
  • half onion, diced
  • 1 large carrot, diced
  • 1 red pepper, diced
  • 1 stem celery, chopped
  • 1 courgette, diced
  • 2 chorizo sausages, peeled and sliced
  • 5 overripe tomatoes, pulsed in a blender
  • 1 tbsp chopped fresh thyme
  • 5 cups double chicken stock
  • quarter pkt spaghetti, broken into small pieces
  • half cup green peas
  • quarter cup flat leaf parsley
  • 1 can cannellini beans
  • 1 tbsp thyme oil
  • salt and black pepper to taste
  • grated parmesan and oven fresh bread to serve

 Method

  1. In a large pot, heat the olive oil, garlic, chilli, chorizo and onions.
  2. Add the tomato puree.
  3. Add the carrots, celery and red pepper.
  4. Add the Syrah, Grenache.
  5. Add the tomatoes and the chopped thyme and bring to the boil.
  6. Add the double chicken stock.
  7. After five minutes of boiling, add the spaghetti.
  8. Add the courgette, peas and cannellini beans.
  9. Adjust seasoning, add parsley and garnish with thyme oil.
