Blup, blup, blup comes the gentle percussion, almost like music, from the barrel cellar. Yes, it’s fermentation time at Creation and the entire cellar team is standing by to attend to the intricacies of barrel fermentation.

Let’s take our Chardonnay as an example. Most of it is currently going through primary fermentation in the barrels. In a few weeks’ time this will stop and when it does, we will start with weekly batonage for the first six weeks, stirring the fine lees through the wine to create a creamier palate with more depth.

Depending on the temperature as well as the acidity and pH of the wine, malolactic or secondary fermentation will occur within three to four weeks after primary fermentation has been completed. Malolactic fermentation is the conversion of aggressive malic acid (present in the grape at harvest time) to mild acid called lactic acid and lowers the perceived acidity of the wine, making it rounder on the palate. Some winemakers believe that it can also mitigate the harshness associated with new oak, softening its dominance and allowing for better integration.

During this process the wine will be stirred again every three to four weeks and then left to settle in the barrel for nine months to clear. In the 10th month it will be racked for bottling – a longer gestation period therefore than a baby!

Other cultivars currently in the cellar are our Sauvignon Blanc which is being destemmed before going through primary fermentation in stainless steel tanks. Our Pinot Noir is presently undergoing primary fermentation in wood fermenters, while 50% of our Viognier is in stainless steel fermenters where the delicious juice is converted into delightful wine.

But, back to our Chardonnay. Our talented chef Warwick Taylor and his team have set out to demonstrate the versatility of this gorgeous wine by each preparing a dish to match the 2013 vintage.
