Heart-warming pairings are the order of the day at Creation this month. We’ve had a wet and blustery start to another Cape winter here on the Hemel-en-Aarde Ridge with the last of the leaves carried from the vines by the Southeaster coming in off the not-too-distant Atlantic Ocean.

Although the stunning show offered by autumnal vines is pleasing to the eye, the naked vines of deep winter have a certain austere beauty of their own. Apart from providing a lovely winterscape, this period of dormancy is of course essential in the growing cycle of the vines. As the vines rest and store up energy for the frantic growth that spring will bring, the Creation Tasting Room is abuzz with activity, preparing among others for our participation in Hermanus FynArts – an annual celebration running from 6 to 16 June this year.

We also continue our celebrity chef wine pairing series with the 2012 Creation Merlot the wine for June and Zola Nene our first guest chef for the month. Zola of course is the highly acclaimed chef and food stylist from the SABC Expresso TV show and to match the lavish flavours of the Merlot she created her hearty yet sophisticated SLOW ROAST LAMB SHOULDER WITH BUTTERNUT AND POTATO DAUPHINOISE.

Vivacious and passionate about food, Zola was delighted to join the select number of chefs invited to design a perfect pairing for one of the wines in the Creation portfolio. She was particularly excited to be working with the Creation Merlot 2012, a wine that shows this cultivar to its full potential. Discussing her choice of pairing, Zola says:

“My slow roasted lamb recipe has a spicy rub that perfectly matches the spicy notes of the Merlot. The wine is robust and can stand up to the full flavours of the slow cooked lamb. During the long cooking process, the onions and lamb juices soak up the flavour of the wine and the flavours intensify, making the sweet fruity notes more pronounced. This is my idea of a perfect marriage of flavours: the wine and food don’t overpower each other, but enhance each other and become more complex with each bite of the dish and each sip of wine.”

The Creation Merlot 2012 is the kind of wine that can turn any dinner into a fantastic meal. Multi-facetted like a finely cut ruby in the glass, it entices with a bounty of fruity and spicy aromas. On the palate, rewarding dark chocolate and mocha combine with generous ripe berry flavours, supported by the firm structure derived from
judicious maturation in French oak barriques.
