With the recent launch of the Creation Sauvignon Blanc Semillon 2014, Creation Wines has invited local chef Benjamin Conradie of Grootbos Private Nature Reserve to showcase his interpretation of the perfect pairings for this versatile wine across three weeks and a delectable array of flavours.
Situated just outside of Gansbaai in Walker Bay, Grootbos Private Nature Reserve is nestled between mountain and sea – a five-star eco-paradise showcasing the incredible flora and marine life in this unique setting at the southern tip of Africa. Home to the marine Big 5 (whales, sharks, dolphins, seals and penguins), and with unparalleled floral diversity, Grootbos serves as home and inspiration to the featured chef Benjamin Conradie. Surrounded by the Cape Floral Kingdom and situated near a number of marine and nature reserves, it is also just a 30 minutes from the Hemel-en-Aarde, home to Creation Wines.
This week Chef Benjamin has created a magical dish to mark the changing of the seasons – winter is rapidly fading from our memories as the flux of springtime approaches and the distinctly terroir expressive Creation Sauvignon Blanc Semillon 2014 is perfectly suited to complement these changes.
SHIITAKE MUSHROOM PLATE
“I wanted to focus on one ingredient, and have it pair with the wine in four different ways,” says Chef Benjamin, “shiitake mushrooms have an earthy truffle-like character – something which adds to the salty bouquet of the wine, while enticing green fig on the palate’.
The Shiitake Mushroom Plate combines fresh and seared pickled mushrooms with a rich, thyme-scented mushroom pâté which incorporates the Creation Sauvignon Blanc Semillon in the recipe, as well as a simple fresh shiitake Carpaccio.
Light straw-yellow in colour with glints of green; the invigorating, salty bouquet is reminiscent of the fresh sea breezes caressing our vineyards, complemented by delightful hints of green fig. The Hemel-en-Aarde area is renowned for producing some of the finest examples of Pinot Noir and Chardonnay in South Africa, and is considered to be an important New World area for burgundies. This affinity for the delicate Pinot Noir grape has prompted co-owner and cellarmaster JC Martin to produce three stylistically unique Pinot Noirs from the estate: the Estate and Reserve Pinot Noir ranges which have recently been awarded Top 100 status in South Africa, as well as the soon to be launched Art of Pinot Noir – just four barrels selected and hand-crafted by JC and made to age. Being celebrated as a Pinot Noir producing area, one of the most frequently commented upon features of the Creation range of premium estate wines is the wide array of other cultivars produced on our 40 hectare farm.
