At Creation Wines, perched high up on the Hemel-en-Aarde Ridge near the coastal resort of Hermanus, nothing says ‘spring has arrived’ like the dappled leaves and intricate white florets of the Aponogeton distachyos inching across ponds and dams everywhere.
The Water Hawthorn – more commonly known in its native South Africa as ‘Waterblommetjie’ is an aquatic flowering plant now found in many countries around the world after being introduced to 17th century Europe by travellers. It is now naturalised in many parts of the world. Apart from its pleasantly sweet smell the waterblommetjie is widely cultivated across South Africa for its edible buds and flowers to be used in the traditional Cape dish, waterblommetjiebredie (waterblommetjie stew). Another sign to welcome the lengthening days is the explosion of colour in the Chardonnay block as the first bright green buds and leaves have appeared, and the similarly vivid pincushions in our fynbos garden which are starting to open up.
Wandering down through the garden and to the dam, Chef Warwick Taylor was inspired to get his feet wet this week. Unable to resist wading in and collecting some waterblommetjies, he returned to the Tasting Room kitchen not more than 50 metres away to prepare his truly amazing Waterblommetjie, Tomato and Marron Risotto, Spinach and Pea Shoot Purée. According to Warwick this delectable dish is even more memorable when matched with the 2014 Creation Sauvignon Blanc, Semillon – a wine with an invigorating, salty bouquet reminiscent of the fresh sea breezes caressing our vineyards. “The sweet delicate meat of the fresh water marron, the sulphurous hints from the waterblommetjies, the slightly herbaceous characteristics of the spinach and pea shoots and the fresh flavour of the tomato are all beautifully enhanced by the qualities of a great Sauvignon Blanc, Semillon blend,” says Warwick.
