Joseph Dhafana – La Colombe, Constantia, Cape Town
In this popular series we feature selected sommeliers from top restaurants around the world. Each chooses his or her favourite Creation wine, tells us why and recommends a matching dish. This week we welcome the talented Joseph Dhafana from the internationally acclaimed La Colombe in Cape Town.
Creation Wines is very special to me in many ways. Firstly I was introduced to their wines by now a best female friend who relocated to Australia, Lara Levey. Secondly, Jean-Claude makes unique and honest wines with great consistency, using healthy grapes with minimum intervention. I personally believe wine is made in the vineyard and JC’s wines reflect their terroir.
I chose the Creation Syrah, Grenache not only because those are my two favourite red grape varieties but also because they work so well together and amazingly when grown in a cooler region like Hemel-en-Aarde. When well made, the blend will be food friendly; yet having said that, it still remains important for the chef and the sommelier to work hand in hand to find the perfect pairing.
So our creative and innovative chef, James Gaag, created the dish after we had both tasted the wine and had agreed upon what we expect from the match. His Smoked Ox Tongue with Tomato, Coriander, Capers and Red Onion Marmalade topped with Umami Broth was served with Roasted Bone Marrow and Anchovy on White Truffle Sourdough, Aubergine and Salsa Verde on the side. Delicious on its own; fabulous in combination with the Creation Syrah, Grenache.
The smoky, spicy and earthy character of the wine is a great match for the chipotle (which is quite spicy) and coriander in the dish, while the wine’s rich and ripe dark berry flavours flatter the tomato and red onion in the dish and beautifully balances the umami.
