The Creation Culinary Team delight in offering their guests an ever-changing repertoire of aromas and flavours, textures and colours to be shared, savoured and explored. The current ‘Reaching for the Stars’ campaign which incorporates the input of top international chefs, sommeliers and restaurateurs enhances these culinary adventures.
Among the most recent stars to grace the Creation firmament have been Tiina Treumann (owner) and Marko Kalyend (chef) of the renowned Estonian restaurant, Salt in Tallinn. Tiina loves to travel the world and finds it fascinating to learn about different cultures and culinary traditions. She is often accompanied by one or more members of the Salt team who share in the experiences and take new ideas and trends back home to incorporate into traditional Estonian fare. This fusion has become a trademark of the ever-evolving Salt menu.Here are some excerpts from Tiina’s ‘South African Diary’:
February 10th. We leave from a windy, snowy Tallinn to sunny South Africa. Our main mission is to join the culinary team at Creation Wines in the Hemel-en-Aarde region to share ideas, learn from each other and ultimately prepare and present two dinner and wine pairings.
I am overwhelmed by the hospitality we receive from owners Carolyn and JC Martin and the Creation team. I am equally impressed by what they have achieved, creating this magnificent estate with hard work and dedication. They are truly a big family working very hard to produce excellent wines and food – in fact some of the best I’ve ever tasted!
In preparation for the two dine and wine events, we work closely with our Creation colleagues, having a great time. Marko (even though suffering a little from sunburn) reports that he has already learnt a great deal and is amazed at the team’s ability to cater for some 200 guests over lunch and then still host a dinner for 60 guests in the evening.Wow! It’s been a busy week so far and I’m hoping that my contribution will add to our mutual learning experience.
February 14th (Valentine’s Day). Not used to the vast distances in South Africa, we’re surprised that guests would travel so far to experience our Salt and Creation collaboration titled ‘Creation, with Salt’. Well, every dish on the exciting 6-course menu was prepared to the highest culinary standards. People loved the food which in combination with the wine got us a standing ovation. February 17th. Yet another glorious success with Creation’s Carolyn Martin being a magnificent host and, may I add, the Creation Viognier my absolute favourite with the ostrich. Apparently they have ostriches in Estonia!
What more can I say? I really look forward to having Creation on our wine list at Salt and being able to tell their amazing story.
