When Jean-Claude (JC) and Carolyn Martin established Creation on the Hemel-en-Aarde Ridge in 2002, the land had never been planted to vines before. This offered JC, a Swiss-trained viticulturistand winemaker, a blank canvas. Having meticulously considered soil, climate and aspect he selected the cultivars best suited to the terroir – and had the foresight to plant only virus-free clones. Now, with the 2018 harvest wellunder way, the Creation team once again reaps the advantages of this decision. The grapes harvested to date are well balanced with excellent fruit concentration and intensity of flavour. Commenting on the quality, JC simply points out that healthy vines equal healthy grapes and that this is key to his philosophy of ‘enhancing the beauty of nature’.

Creation in 5 Delectable Chapters
With the 2018 harvest in full swing there’s never a dull moment in either the vineyard or the cellar. The members of the Creation Culinary Team have been equally busy, planning a brand-new The Story of Creation pairing menu to celebrate the harvest. This is arguably the most popular of Creation’s amazing eight pairing options and the new menu comprises five tantalising courses.
Creation pairing guru Carolyn Martin elaborates: “Every Creation wine tells a distinctive story and we believe that context plays an important part in the enjoyment of wine. Each wine presented in The Story of Creation enhances an artfully created small-plate dish and thus the Creation narrative unfolds with each delectable chapter.” All in all a multi-faceted pairing experience.

Creation Viognier – a Wow with Chocolate
Some three years ago the ever-enterprising Creation team took the thrill of wine and food pairing even further by introducing their now highly popular Paradoxical Wine and Chocolate Pairing. Why Paradoxical? Carolyn explains: “Many people think chocolate simply shouldn’t be paired with wine. At Creation we thought, ‘challenge accepted’. The premise is that instead of pairing the chocolate itself with wine, the chocolate serves as a vessel infused with vivid flavour profiles to elevate the flavours within the wine. I ate copious amounts of chocolate and drank a huge amount of wine and tasteda myriad spices, herbs and other ingredients to get to the point where each chocolate worked with each wine!” Among the four heavenly combinations is the Creation Viognier enhancing salted white chocolate infused with white peach and almond.
