Never prepared to rest on their laurels and always eager to treat their guests to new culinary adventures, the Creation team have just relaunched their Charcuterie Pairing Menu. The new offering features a feast of four courses, each comprising an award-winning Creation wine perfectly paired with an artisanal meat cut and accompanying side dishes.
“In line with our philosophy of creating distinctive wines expressing our unique terroir, is our belief that ‘what grows together, goes together’,” says Creation pairing expert, Carolyn Martin. “As with all our other pairing menus, our new charcuterie menu is based on fresh, locally grown produce.” Only the finest seasonal ingredients from selected local suppliers are used and at present more than 80% come from neighbours in the Overberg region.
The meat for the new menu is sourced from Praise the Lard, a recently established boutique charcuterie owned by Sheena Bruce and based in the nearby town of Caledon. Connel Massyn is the charcutier, Hettie Jacobs the block lady and all their handcrafted salamis, hams, coppa, lonza and other products are made using pasture-reared pork from Glen Oakes Farm in the Hemel-en-Aarde.
“We’ve been applauding the way Charlie Crowther of Glen Oakes raises happy pigs that graze on open pastures and forage under oak forests for years. Their natural, active lifestyle reflects his ethical farming practices which together with their diet, supplemented by acorns, truly make a remarkable difference to the quality of the charcuterie,” says Carolyn.
For course one on the menu the delightfully crisp and fruity Creation Cool-Climate Chenin Blanc is served with freshly sliced Country Ham, home-baked Glühwein Seed Bread and Farm Butter with Citrus Buchu Fynbos and Blood Orange Olive Oil. A scrumptious example of ‘what grows together goes together’!
The second course is a marriage of the multiple award-winning Creation Reserve Chardonnay with the Noix de Jambon with Walnut Crisp, Caramelised Cauliflower Purée, Thyme and Pineapple Sage. “This amazing pairing is about intensity as well as lightness, with our homegrown herbs echoing the crispness of the wine,” explains Carolyn.
To complement the equally famous Creation Reserve Pinot Noir the culinary team chose Bresaola with Raspberry Curd and Wholegrain Mustard, Beetroot and Thyme Lavash, Raspberries, Fig and Violets. This dish is as visually attractive as it is delectable on the palate with the fragrant spiciness of the wine elevating it to a heavenly realm!
The Creation Reserve Merlot is renowned for its exciting layers of dried goji berry and warm wood spice – simply perfect with the fourth course of Cacciatore Salami, Sumac and Gorgonzola, Hazelnut and Thyme Lavash and Wild Rosemary Flowers. The spicy salami is well matched by the vibrancy of the wine while the wild rosemary and thyme serve to soften and plump out the tannins in the wine, complementing the freshness.
Emphasising the fact that the new Creation Charcuterie Pairing Menu celebrates the uniqueness of the Overberg, its people and its produce, Carolyn says: “At Creation we always strive to impact positively on our local community and the environment. With our new charcuterie menu we bring our guests something truly artisanal and special and we sincerely hope that they will enjoy these pairings as much as we did, creating them.”
