Inspired by the multiple-award-winning Creation Bordeaux-style blend, gifted chef William Carolissen conjured up a truly unforgettable pairing for the 2012 vintage.

With a passion for modern, fresh cooking, William is bringing his version of South African cuisine to Mosaic Lagoon Café (in the historic 1892 Spookhuis) and at the luxury Lagoon Lodge – with a twist of course! Situated on the banks of the Klein Rivier Lagoon in Stanford, Mosaic Private Sanctuary offers tranquillity and luxury in equal parts since its restoration by Breese and Kathryn Johnson.

With fond childhood memories of home-style cooking, William ventured into the hospitality industry, working his way from a part-time position in the scullery during his high school days to completing his National Diploma in Hospitality at Cape Peninsula University.

His career has thus far taken him to New York where he was part of the Martha Stewart Show, and a trip to Dubai where William cooked at the super luxurious Al Maha Desert Resort & Spa.

As the perfect partner for the 2012 Creation Merlot, Cabernet Sauvignon, Petit Verdot, William created his Grainy Mustard Glazed Ostrich Fan Fillet with Soft Polenta, Tomato ‘Smoor’, Butternut Purée and Red Wine Jus.

“The delicate sweet game flavours of ostrich together with the spiciness of the local tomato ‘smoor’ complement the rich berry aromas whilst the sauce enhances the smokiness of the wine. And then the creamy butternut purée rounds off the amalgamation of different flavours with a hint of earthiness,” explains William. Click here for the recipe

Creation Wines is pleased to announce that to coincide with the considerable progress being made on the surfacing of the R320 Road towards Caledon from Hermanus, and due to increased traffic, we will be upgrading the access roads and infrastructure leading to the Cellar. Please note that while the farm and Tasting Room will still be easily accessible and operate during their regular hours, there will be directed access from 12 to 26 May. The entrance to the farm will also be upgraded during this period, with the rehabilitation of the stream and marshy areas and removal of alien vegetation a priority. There are also plans in place for a helipad with easy access to the Tasting Room and Cellar to be built at a later stage.
