Celebrating the Cultural Wealth of our Nation
In South Africa September is Heritage Month and of course also the glorious month of spring renewal. While the saps are rising in our vines and the swallows making their joyous return, we at Creation are bursting with energy!
We take pride in the cultural diversity of our team and the innovation this brings to our business. We are also blessed to have a very diverse client base and are always inspired by the feedback loop of innovation this brings to Creation. What is especially rewarding is the environment of sustainability resulting from this interaction. It is a great truth that sustainability is fired by innovation – and vice versa. A sustainable environment creates opportunities for improving what we do best: bringing you great wines and great experiences.
Our appreciation for our natural heritage is amply reflected in our pairing menus. We love sharing our indigenous and home-grown produce to showcase the biodiversity of our region. While some of it is grown in our own gardens, we also work alongside Unified Biotics and furthermore have foraging licenses, strictly adhering to minimal and sustainable foraging. An example is our locally and sustainably sourced abalone which is exported as sashimi grade to Japan.
Speaking of abalone, our popular Healthy Heritage Menu takes you along the historic Maritime Spice Route of the 17th Century, treating you to Chef Charl’s Abalone Sushi with Avocado, Carrot Gochujang, Sesame Seeds and Rice Vermicelli. The spicy, nutrient-rich abalone pairs beautifully with the vivacious Creation Viognier, Roussanne blend with its citrus notes. Click here for the recipe.
Another delectable example of Chef Charl’s ingenuity is his Springbok Tartare served with Truffle, Gherkin and Potato Chip. “I have adjusted my classic tartare recipe, using flavours South Africans can relate to, like springbok and coriander,” says Charl. The result has shades of traditional biltong, with the truffle and gherkin elements pairing amazingly well with the Creation Reserve Chardonnay. Click here for the recipe.
Yet another winner on our Healthy Heritage Menu is Chef Abongile’s Confit Sweet Potato Fondant, with Garlic Aioli, Black Garlic, Chives, Radish, Pickled Onion and Citrus Buchu. The nearby town of Napier is of course the traditional home of the sweet potato in South Africa. Garnished with a delicate pink confetti bush flower, the dish pairs perfectly with the colour of the wine which in turn is a superb foil for the savoury, indigenous herbs.
With its roots in our pristine Overberg environment, our Healthy Heritage Menu brings you what we value most: nature’s balance. Let the good things grow. Let the energy flow. We would love to share our team’s incredible talent, our love for our environment and our sense of place with you. Our chefs cater for most dietary requirements. With the school holidays upon us, may I remind you of our very special Creation Experience for Kids which includes a creative and interactive menu designed in consultation with a local occupational therapist.
